Recipe Box: Panna Cotta, Orange Gelee & Grapefruit Sorbet

Bub doesn’t have much of a sweet tooth and doesn’t like chocolate very much. He prefers super tart desserts, so for Valentine’s Day–I made him vanilla panna cotta with orange gelee and grapefruit sorbet.

Grapefruit Sorbet Recipe

What you’ll need:

  • Ice cream machine
  • Plastic container
  • Spatula
  • Strainer
  • 1 & 1/4 cup of sugar
  • 1 & 1/4 cup of water
  • 1 teaspoon of grated grapefruit zest
  • 2 cups of fresh grapefruit juice
  • 2 tablespoons of fresh lemon juice
  • 1 teaspoon of fresh ground black pepper
  • 2 tablespoons of milk


  1. Combine the sugar, water and zest in a pot and bring to a boil over med-high heat, stirring until the sugar dissolvees. Remove the pan from the heat and set it aside to steep for 5 minutes.
  2. Stir in the grapefruit and lemon juice. Strain the mixture into a bowl. Mix in the black pepper and put it into a plastic container. Cover the container and store it in the fridge for about 4 hours until it is thoroughly cooled.
  3. Process the sorbet in an ice cream machine (don’t forget to freeze the machine’s bowl!) Transfer to a freezer proof container, cover and freeze the mixture until ready to serve.

Panna Cotta Recipe

What you’ll need:

  • Sauce pan
  • Serving cups (I used champagne flutes)
  • 2 teaspoons of gelatin
  • 1 & 1/2 cup of heavy cream
  • 1/4 cup of sugar
  • 1/2 cup of whole milk
  • 2 teaspoons of vanilla
  • vanilla bean (optional)


  1. Place  3 tablespoons of cold water into a medium bowl and sprinkle in the gelatin. Let it stand until the gelatin has softened (about 4-5 minutes).
  2. Stir together creama nd sugar in a medium saucepan over medium-high heat, stirring to dissolve the sugar (don’t bring it to boil) until bubbles form at the edge (about 2 minutes). Pour mixture into bowl with gelatin and whisk until gelatin has dissolved. Stir in the whole milk. Pour through seive into a bowl. Pour the filtered mixture into each cup and refigerate for about 2 hours.

Orange Gelee Recipe

What you’ll need:

  • Sauce pan
  • 3 tablespoons of lemon juice
  • 1 tablespoon of cold water
  • 1/2 teaspoon of gelatin
  • 1/2 cup of orange juice
  • 1/4 teaspoon of vanilla extract
  • 3 tablespoons of sugar


  1. Sprinkle gelatin over lemon juice and water. Wait for 5 minutes until it is softened. Do not stir.
  2. Warm orange juice, vanilla and sugar in a medium saucepan over low-medium heat for five minutes until the sugar is completely dissolved (about 5 minutes).
  3. Remove from heat and add gelatin mixture, allow to cool for at least five minutes before gently spooning over your set panna cotta.
  4. Refrigerate for 2+ hours.

To put it all together–top off each cup of panna cotta with a scoop of the grapefruit sorbet, a sprinkle of lemon zest and a lady finger.
